Organic Beets: Bull's Blood Planting Instructions:
Bull's Blood Beets grow for 50 days and do best in full sun. Sow the seeds 3/4 inch deep and 3 inches apart. Cover with well-worked, well-draining soil. After 14 to 21 days, seedlings will emerge. When the beet greens are 1-2 inches tall, thin the plants to stand in rows 12 inches apart. Beet seeds are actually clusters of seeds and require more thinning than other crops. Make sure weeds are kept under control and the plants are well-watered during dry periods. Beets need about 1" of rain each week.

Organic Beets: Bull's Blood Harvesting Instructions:
For baby beets, harvest roots at 1 inch in diameter. For mature beets, harvest up to 3 inches in diameter. Store the beets at 33-35 F and 95% humidity. You can harvest the greens when they are 4-6 inches long and the roots are less than 2 inches in diameter. Beet greens can be eaten raw or cooked.

Of all the beet varieties, Bull's Blood Beets are the only kind to have red roots, stems, and leaves. You can eat all parts of the plant and they make a beautiful addition to many dishes, because of their color.
